Best to use a gluten-free or high protein pasta– I like the bowtie pasta but any small pasta would do.Â
Great as an accompaniment to my Spicy Black Bean Burgers or French Onion Grilled Cheese Sandwich! Â
Lemony Hummus Pasta Salad
This is a wonderfully fresh-tasting pasta salad, with Mediterranean flavor and nutrition from hummus, spinach, sun-dried tomatoes and parsley. The fresh lemon juice adds extra zing!

Ingredients
- 4 oz pasta, (recommend bowtie, gluten-free)
- 1 cup hummus, any kind without nuts
- 1 lemon, juiced and zested
- 2 tbsp extra virgin olive oil
- 2 handfuls spinach, roughly chopped, uncooked
- 8 sundried tomatoes (packed in oil), roughly chopped
- 1 large handful fresh parsley, chopped
- 1 generous pinch dried chili flakes
- 1/2 tsp salt, Kosher or Himalayan
- 1/4 tsp ground black pepper
Instructions
- Cook pasta according to package directions. Drain and reserve cooking water. Place hot pasta in a bowl and toss in the chopped spinach to wilt. Cool.
- In a medium bowl, whisk together the hummus, 1/2 cup pasta water, lemon zest and juice and olive oil. Add in the cooled cooked pasta and spinach; mix together well.
- Add in the sun-dried tomatoes, parsley, chili flakes, salt and pepper. Toss together again. Taste and add more lemon juice, salt and pepper to your preference. Enjoy!
Notes
You could even add small cubes of tofu or plant-based chicken to this dish to recipe to up the protein content even further and create a main meal.
