This is a wonderfully fresh-tasting pasta salad, with Mediterranean flavor and nutrition from hummus, spinach, sun-dried tomatoes and parsley. The fresh lemon juice adds extra zing!

Ingredients
4ozpasta, (recommend bowtie, gluten-free)
1cup hummus, any kind without nuts
1lemon, juiced and zested
2tbspextra virgin olive oil
2handfulsspinach, roughly chopped, uncooked
8sundried tomatoes (packed in oil), roughly chopped
1large handfulfresh parsley, chopped
1generous pinchdried chili flakes
1/2tspsalt, Kosher or Himalayan
1/4tspground black pepper
Instructions
Cook pasta according to package directions. Drain and reserve cooking water. Place hot pasta in a bowl and toss in the chopped spinach to wilt. Cool.
In a medium bowl, whisk together the hummus, 1/2 cup pasta water, lemon zest and juice and olive oil. Add in the cooled cooked pasta and spinach; mix together well.
Add in the sun-dried tomatoes, parsley, chili flakes, salt and pepper. Toss together again. Taste and add more lemon juice, salt and pepper to your preference. Enjoy!

You could even add small cubes of tofu or plant-based chicken to this dish to recipe to up the protein content even further and create a main meal.
